Small, dense green lentils hold their shape for salads and more.
Heart green lentils famous as a side dish, in stews, soups, and even salads. West Coast-grown for our own unique terroir. These lentils are very similar to lentilles du Puy, which must be grown in France. We think our West Coast terroir adds to the flavor.

Famous as a side dish, and in stews, soups, and salads. They thrive in warm dishes like soups and stews, but we love them in a very french salad with grated carrots and a strong Dijon vinaigrette.
Cooking Instructions
Check lentils for debris, and rinse thoroughly. Place in a pot and add enough water to cover by about 2 inches. If you like, add aromatics like a bay leaf or garlic clove. Bring to a full boil, then reduce heat to a gentle simmer, using a lid to help regulate the heat, and gently cook until done, 25 to 35 minutes. Salt to taste. Remove aromatics, and serve

Great in soups and salads
I've made the mistake of using other varieties of green lentils in my favorite soups and salads, and the others all lack flavor and have gritty textures. These are perfectly firm, slightly nutty, and tasty enough to eaton their own!

Great lentil soup!
First time buying RG beans and very happy! Tried this with the RG French Leek Lentil Soup recipe from the site and it was delicious. The lentil beans you buy from the regular store tend to be bigger....not sure but this size seemed to work better with the water ratio. All the chopping of veggies was worth it. Will be in my regular rotation!

Comfort food!
I cooked these with what I had: your Mexican oregano, onion, diced tomatoes, garlic, cumin, smoked paprika, and a little handful of rice. Savory, delicious, quick. You could have a pot of soup in about the time it takes to order bad (or good) takeout and get it home. Will make these a pantry staple.

Fantastic in everything
My favorite way to use these lentils is in Nigel Slater’s lentil bolognese (the recipe is on Serious Eats) but they are just as delightful simply stewed with tomatoes. Very flavorful without being too earthy, just delicious.
